Philosophy

As a family winery in Villány, wine for us is the shared work of nature and people. We focus exclusively on making clean, honest wines, while paying attention to how the estate can operate more responsibly in the long term.

Hand harvest

Our commitment begins with the careful selection of grape bunches. Hand harvesting is essential for quality, ensuring that only the healthiest bunches reach the cellar.

Kíméletes bogyózás

The hand-harvested bunches are gently destemmed with a careful destemmer, making sure the berries are not damaged. The berries remain whole, which is an important part of berry selection.

Berry selection

Whole berries are placed on the sorting table, where two of our colleagues select them by hand during harvest. During the process, unsuitable elements such as damaged berries, leaves, stem fragments and insects are removed, so only perfect berries enter the tank for fermentation.

1990 - A kezdetek

This was when we founded the winery with just half a hectare of vineyard and a capacity of 1,500 bottles. In the first vintages, enthusiasm and manual work made up for everything technology could not yet provide — this is where the Günzer story began.

1995 – Új borászati üzem

Megépült az első, 400 négyzetméteres borászati üzemünk, amely már lehetőséget adott a tudatosabb borkészítésre.

Ez az év mérföldkő volt: a kézi munka mellé megérkezett a technológiai fejlődés, ami új szintre emelte a birtokot.

2004 – Az Ördögárok dűlő

The Ördögárok vineyard was created through enormous effort, moving more than one million cubic metres of earth. Today it is still one of the estate’s iconic sites, with a unique microclimate, southern exposure and exceptional conditions for producing serious Villány red wines.

2006 – A Bocor vineyard

We planted the Bocor vineyard above Kisharsány, one of the defining villages of the wine region. With its 8 hectares, it became the largest contiguous vineyard of the estate, home to our Kékfrankos and Portugieser varieties.

2012 – A new level of selection

The new, gentle berry sorting system arrived and completely transformed our processing workflow. The technology made it possible for our already clean wines to become even more precise, more varietally expressive and more refined.

2015 – A Jammertal vineyard

Villány legrégebbi dűlőjében meglévő területeink kibővítésével és újratelepítésével egy lenyűgöző, egybefüggő birtokrész jött létre. A Jammertal dűlő ma is a borvidék egyik legnemesebb területe, amely a prémium boraink otthonául szolgál.

2020 – New winery building

As the largest investment in our company’s history, our new 1,200-square-metre winery facility was built. With its modern tanks and spacious areas, the new processing unit allows us to work in calm and precise conditions.

From hand to hand

For us, sustainability is not a goal but a natural part of how we live and work.

By 2030, we would like the energy used during the harvest period — especially the energy needed to cool the tanks — to be covered entirely by renewable energy.

By 2035, our goal is for the amount of wood used for winter heating to be in long-term, regrowing and sustainable forestry balance with the forest area available to us.

Family

Use of solar panels

Borászatunk felett napelemes rendszert telepítettünk, amelyek fedezi az egész éves energiaigényünket. Így nem használunk fosszilis tüzelőanyagokat, és csökkentjük a szén-dioxid-kibocsátásunkat is. A napelemek segítségével tiszta, megújuló és olcsó áramot állítunk elő mely hozzájárul a fenntarthatóságunkhoz.

Energy from our own forest

We heat entirely with wood from our own forest, which we always replant. This not only keeps our wine cellars and guests warm, but also helps maintain the ecological balance of the forest. We process the wood with our own workforce, supporting the sensible use of human labour during the winter months.

Növényvédelem esővízből

Borászatunk teljes tető felületéről származó esővizet elvezetjük egy direkt erre a célra kialakított föld alatti tárolóba.

Ez a mennyiség fedezi a teljes éves használatunkat, melynek köszönhetően növényvédelem során egyáltalán nem használunk hálózati vizet.

Tudatosabb csomagolás és könnyebb palackok

A csomagoláshoz nagyrészt újrahasznosított alapanyagokat használunk, hogy óvjuk a környezetet. 

A borosüvegeinket és a kartondobozainkat újrahasznosított üvegből és papírból készítjük, amelyeket alkalmasak a további újrafelhasználásra. Palackjaink továbbá könnyített üvegből készülnek, így csökkentve a szállításukkal járó többlet szennyezést. 

Conscious use of workforce

During the winter months, when there is less work in the vineyard, we organize the operation of the estate so that the workforce is used usefully and sensibly. At this time, we carry out thinning work in the forest.
